It’s your turn to host Christmas lunch this year and you love to put on a good show. Expectations are running high and you’re still looking for the perfect way to impress your guests. Well, here it is, with our unique CRU twist. Amazing how easy it is to share the merriment with a cup or three of CRU.
Ingredients3 shots of CRU Intense Espresso
75g dark brown sugar
1 stick of cinnamon
A handful of thyme sprigs
Zest of 1 orange
5kg leg of ham, bone in, skin removed and leg trimmed
Method1. Preheat the oven to 200°C/180°C fan/Gas mark 6.
2. Add the coffee, marmalade, sugar, cinnamon, cloves, thyme and orange zest to a pan. Stir well to combine. Place over a medium heat and bring to a boil. Simmer for approximately ten minutes until the glaze is thick and syrupy. Stir occasionally to prevent burning.
3. Allow the gorgeously sticky glaze to cool in the pan and then strain through a sieve.4. Using a small, sharp paring knife, score the ham fat with a diamond pattern and push a whole clove into each diamond.
5. Line a roasting tray with foil and place a wire rack over the top of this. Place the ham on top of the rack, then brush the ham with the glaze. Cover with foil to prevent burning and place in the oven. Brush the glaze every ten minutes.
6. Roast for 40-50 minutes until the outside of the ham is golden and beautiful.
Of course, this gorgeous, glistening glazed ham is perfect for laid-back Boxing Day buffets or New Year gatherings too. Or, you could always sneak a generous hunk of ham in between two slices of sourdough bread with your favourite mustard when nobody’s looking. Heaven!
